Sesame Tahini Quinoa Meal Prep

Ingredients

Base

  • 2.5 cups quinoa
  • 1 can chickpeas drained and rinsed (de shell if you get bloated easily)
  • 1 cup shredded carrots
  • 1 cup shredded purple cabbage
  • 1/2 cup green onions cut up
  • 2 bell peppers chopped into small pieces

Sauce

  • 1/4 cup tahini
  • 1/4 cup water
  • 3 tbsp coconut aminos or soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 Tsp garlic
  • 1/2 tsp sriracha can use more if you want more spice
  • Mix together to create sauce

Instructions

  • Combine ingredients for base
  • Mix together sauce in a mason jar on the side and shake until well combined
  • Pour over quinoa base
  • Mix together
  • Divide into four meal prep containers
  • Top with green onions and sesame seeds
  • Enjoy hot or cold throughout the week, I like mine heated up a bit but this can be eaten cold.
