Enchilada Meal Prep

Ingredients

  • 3 Large Chicken Breasts
  • 1 Jar Salsa of Choice
  • 1/2 Packet Taco Seasoning
  • 8 Corn Tortillas of Choice
  • 1 Cup Plain Greek Yogurt
  • 1 Can Black Beans

Instructions

  • In a crockpot add chicken (cut in half), half a jar of salsa, and ½ packet of taco seasoning
  • Cook on high for 4 hours or low for 8Shred chicken and set aside (I usually shred the chicken the night before prep to make it easier to assemble)
  • Preheat oven to 350
  • Add one corn tortilla to the bottom of 4 glass oven safe meal prep containers
  • Cover with salsa chicken mixture. In a separate bowl mix together greek yogurt and the other half of the salsa
  • Layer on top of chicken mixture
  • Add a layer of black beans and cheese (Measure with your heart here, I just eyeballed it)
  •  Repeat process with tortilla, chicken, greek yogurt, black beans, and cheese
  • Once you have two tortillas and two layers pop it in the oven for 30 minutes
  • Garnish with cilantro and white onion once cooked
