Big breakfast fan!

-Almond flour tortilla, heated for 20 seconds in microwave. I like the Trader Joe’s ones!
-3 scrambled eggs
-1/2 avocado
-Salt
-Hot Sauce
-Pea Tendrils or sprouts!

HIGH PROTEIN FAJITA PASTA Makes 4 large portions.

HIGH PROTEIN FAJITA PASTA

Makes 4 large portions. This would be great for a meal prep!

- 8oz package of noodles of choice. If you use chickpea noodles it adds more protein
- 2 bell peppers
- 1/2 white onion
- 2 chicken breasts
- 1 packet taco seasoning
-Cilantro

Sauce:
1/2 block lite cream cheese
1/2 cup plain Greek yogurt
1/2 packet taco seasoning
3 tbsp nutritional yeast - optional but makes it have a more cheesy flavor

1. Cook noodles according to package
2. Cut up chicken and season with half of taco seasoning
3. Add to a large pot with olive oil and cook chicken until not longer pink on the inside
4. Add peppers and onions to the pot with chicken
5. Cook together for 4 minutes over medium heat, stirring often
6. Add in cream cheese, Greek yogurt, nutritional yeast and other half of taco seasoning packet
7. Allow cream cheese to melt and sauce to come together, stirring through
8. Drain noodles and add them to pot (if you don’t have a big enough sauce pan you can transfer everything back to a large pot and mix together)
9. Top with cilantro and enjoy!

Taco Bowl Meal Prep with Cilantro Lime Crema Ingr

Taco Bowl Meal Prep with Cilantro Lime Crema

Ingredients:
- 1 lb ground beef or turkey
- 1 packet taco seasoning
- 1 can black beans drained & rinsed
- 1/2 yellow onion
-2 bell peppers
-cilantro lime rice
-cilantro crema

Cilantro Lime Rice
- 1 cup uncooked jasmine rice
- 2.5 cups water
- 1/4 cup chopped cilantro
- 2 tbsp lime juice
- salt to taste

Cilantro Lime Crema:
-blend the following in a food processor
-1/2 cup Plain Greek yogurt
-1/2 jalapeno seeded
-1/4 cup cilantro
-Juice from one lime
-Salt

1. Add ground beef or turkey to a pan and break apart
2. Season with half a packet taco seasoning
3. Cut up veggies and onion
4. Once meat is cooked remove and set aside.
5. Use same dish to cook veggies
6. While veggies are cooking add jasmine rice to water and cover over medium heat for about 8 minutes
7. Once rice is cooked add cilantro, lime, and salt
8. Use a food processor to blend the cilantro lime crema
9. Drain and rinse beans
10. Assemble bowls with turkey or beef, black beans, cooked veggies, and rice
11. Top with cilantro lime crema. I like to add it in small containers and add it after I heat up my meal!

BBQ Chicken Meatballs 1lb ground chicken 1 egg 1/

BBQ Chicken Meatballs

1lb ground chicken
1 egg
1/2 cup almond flour
1 tsp minced garlic
1/4 cup green onions, or red onions diced

BBQ Seasoning:
2 tbsp brown sugar
4 tsp paprika
2 tsp garlic powder
1 tsp cayenne pepper
Salt + pepper

Top with after cooking:
1/3 cup BBQ sauce of choice

- Combine all ingredients except the bbq sauce
- Form the mixture into balls (should make about 12) and place on the baking sheet.
- Bake at 400 for 25 minutes until cooked through.
(Can also be air fried at 390 for 8-9 minutes)
- Place in bowl and toss in bbq sauce until coated
- Serve with brown rice and zucchini sautéed in same seasoning listed above

AIR FRIED TAQUITOS 8 almond flour tortillas (I us

McGriddle Bites - 1 lb ground breakfast sausage,

McGriddle Bites

- 1 lb ground breakfast sausage, cooked
- 2 cups protein pancake mix of choice (I used @flourishpancakes )
- 1 1/2cups water
- 2 cup shredded cheddar cheese
- Maple syrup (measure with your heart)

1. Preheat oven to 400
2. Combine cooked sausage, pancake mix, water, and shredded cheese
3. Divide into 12 sprayed muffin trays
4. Top each with maple syrup
5. Bake 400 for 20
6. Enjoy!

Greek Pasta Salad Meal Prep Pasta Salad: - 8oz ch

Greek Pasta Salad Meal Prep

Pasta Salad:
- 8oz chickpea pasta or pasta of choice
- 1 1/2 cups cherry tomatoes, halved
- 1 english cucumber, cut into quarters
- ½ cup kalamata olives
- ½ cup feta cheese
- ½ small red onion, diced
- ¼ cup fresh dill
- Trader Joe’s Chicken Shawarma (4 chicken thighs) or 4 chicken thighs seasoned with Shawarma seasoning (2 tsp cumin, 2 tsp paprika, 3/4 tsp turmeric, 1/4 tsp garlic powder, 1/4 tsp cinnamon, 1 pinch cayenne, Salt + Pepper)

Dressing:
- ¼ cup tahini
- 2 tbsp water
- Juice from 1 lemon
- Salt + Pepper
- 1 tbsp Maple Syrup
- 3 tsp dijon mustard

1. Boil water and cook noodles
2. Cut up tomatoes, cucumbers, dill, and red onion
3. Add chicken thighs to a pan with olive oil and heat over medium heat, cook for about 5 minutes on each side until chicken is cooked through, depending on thickness of chicken it may take longer.
4. Once cooked chop up chicken into small pieces
5. In a small container with a lid mix together dressing and shake until well combined
6. Add cooked pasta, cherry tomatoes, cucumber, dill, kalamata olives, cooked chicken, feta cheese and red onions to a large bowl
7. Top with dressing and mix until combined
8. Divide into five meal prep containers (this one makes 5 so I had some leftover for another container)

Feta Spinach Egg Wrap - Tortilla - Cream Cheese -

Feta Spinach Egg Wrap

- Tortilla
- Cream Cheese
- 1 cup Egg Whites
- ½ cup Chopped Spinach
- ¼ cup Feta Cheese
- 3 tbsp sundried tomatoes
- Salt + Pepper

1. Sauté chopped spinach with some olive oil
2. Once wilted, add egg whites
3. Cover until egg whites are cooked a little
4. Add sundried tomatoes, seasonings, and feta
5. Cover until cooked
6. Top tortilla with cream cheese
7. Place on top of cooked eggs and flip
8. Allow tortilla to brown and then fold into a taco shape

Bourbon Smash Holiday Cocktail This cocktail “s

Bourbon Smash Holiday Cocktail

This cocktail “sleighs” (my students taught me this hip word and it’s used to describe something that is done really well or killing it 😂) learning from them daily and I think this word definitely applies to this cocktail! Use Q Mixer ginger beer to help elevate cocktails this holiday season.

Per cocktail
-2 oz bourbon
- 2 sprigs fresh mint
-Juice from 1/2 lemon or 2 oz
-1/2 bottle @qmixers ginger beer

1. Muddle mint into the bottom of a shaker
2. Add bourbon and lemon juice on top of muddled mint
3. Pour into two glasses and top with ginger beer

Weekend Recap!

One more week till winter break 🎄

So many fun things going on in the city. If you’re visiting or local you should definitely check out skating at Maggie Daley Park. Reserve your spot online and you can rent skates if you don’t own any. I love walking around the city and seeing all the decor! Also stopped by the Christkindle Market in the loop but it was packed.

Holiday Baked Oats Blend together: - ½ Banana -

Holiday Baked Oats

Blend together:
- ½ Banana
- 1 egg
- ½ cup oats
- 1 tbsp maple syrup
- 1/4 tsp almond extract
- 1/4 tsp baking powder
- ¼ cup almond milk or milk of choice

1. Add to a sprayed oven safe dish
2. Top with chocolate chips
3. Bake at 350 for 30 minutes
4. Top with sprinkles once done baking

Sugar Cookie Jell-O Shots For 18 shots 2 cups wat

Sugar Cookie Jell-O Shots

For 18 shots
2 cups water
1 cup baileys
1/4 cup butterscotch schnapps
1/4 cup kahlua coffee liquor
1 small package of unflavored gelatin

1. mix together baileys, butterscotch schnapps, and coffee liquors in a bowl, set aside
2. Add two cups of water to a medium sized pot and bring to a boil
3. Add in packet of unflavored gelatin after water is to a boil, set to simmer and whisk until gelatin dissolves
4. Turn off heat and mix in the Bailey, butterscotch, and coffee mixture
5. Add 1/4 cup cold water and mix together until well combined
6. Pour into a container with a spout to fill jello shots
7. Fill up 18 plastic shot glasses half full and place in fridge for 3 hours until jello hardens
8. Top with whipped cream and sprinkles
9. Enjoy!

Crockpot Burrito Bowls * 2 large chicken breasts

Crockpot Burrito Bowls

* 2 large chicken breasts
* 1 cup uncooked jasmine rice
* 1 cup chicken broth
* 1 small can of green chilis
* 1 can black beans
* 1 bell pepper, diced
* 1 can fire roasted corn
* 1 can diced tomatoes
* 1 packet taco seasoning

1. Add diced tomatoes, chicken broth, chicken, and half a packet of taco seasoning to a large crockpot
2. Cover and cook on low for 3 hours
3. Then add green chilis, drained black beans, drained fire roasted corn, bell pepper, rice and other half of taco seasoning
4. Cover and cook on low for an additional 2-3 hours. Check the rice every hour and stir it to make sure it does not burn.
5. After 2-3 hours remove the chicken and shred it
6. Divide into meal prep containers if using it for a prep and serve with cilantro and plain greek yogurt or avocado. You can also top it with some cheese!

Higher Protein Tomato Soup - 1 yellow onion, dice

Higher Protein Tomato Soup

- 1 yellow onion, diced
- 1 28 oz can peeled tomatoes
- 2 tsp minced garlic
- ¾ cup cottage cheese
- 3 cups vegetable broth
- 3/4 cup chopped basil
Spices: Oregano, Salt, and Pepper

Grilled Cheese Croutons:
-Sourdough
-Cheddar Cheese
-Butter
-Assemble grilled cheese and toast over medium heat, cut into bite sized pieces and top soup.

1. Add olive oil, onion and minced garlic to a large pot
2. Cook over medium heat until onion is translucent
3. Add in peeled tomatoes, broth, spices, basil, and cottage cheese
4. Mix up and use immersion blender to mix or pour it into a blender. If pouring it into a blender allow it to cool before blending
5. After blended add back to pot and heat over medium heat until bubbling and warm
6. While heating soup make grilled cheese croutons
7. Serve soup with grilled cheese croutons and enjoy!

Chicken Tortellini Soup 1 12 oz package of cheese

Chicken Tortellini Soup

1 12 oz package of cheese tortellini
2 large chicken breasts, cooked and shredded
4 cups chicken broth
1 onion diced (or use Trader Joe’s pre chopped onions, carrots, and celery, they have a mixture with all this in it)
5 big carrots, peeled and diced
5 celery sticks, diced
Spices: paprika, garlic, onion powder, dried basil, dried parsley (Measure with your heart)

- Add celery, onions, and carrots to a large pot with some olive oil
- Saute until onion is translucent and add in broth, seasonings, shredded chicken, and tortellini
- Cover and cook for about 10 minutes until tortellini is cooked
- Serve with warm bread and top with parmesan cheese.

Whipped Brie -8 oz Brie -1/4 cup cottage cheese

Whipped Brie

-8 oz Brie
-1/4 cup cottage cheese
-1/4 cup chopped pistachios
-Honey
-Fresh Thyme

1. cut off skins of Brie and cut into cubes.
2. Leave out of fridge for 30-45 minutes to come to room temperature before blending. It won’t blend if it’s too cold
3. Add to food processor and blend until grainy
4. Add cottage cheese and blend until smooth
5. Transfer to a dish and top with pistachios, honey, and fresh thyme
6. Serve with crostinis. I like to make mine stove top coating bread slices in olive oil and flipping over medium heat.

Extra Creamy Hot Coco - 1 cup plus 2 Tbsp. Milk,

Extra Creamy Hot Coco

- 1 cup plus 2 Tbsp. Milk, divided
- 2 Tbsp. hot cocoa mix
- 2 Tbsp. Cream Cheese (sounds weird but trust me)
- 2 tsp Coconut sugar or regular cane sugar
- 1 Tbsp. heavy whipping cream
- 3 Marshmallows
- 1 Tbsp. crushed hard peppermint candies

1. Microwave 1 cup milk in large microwaveable mug on HIGH 1 min. or until hot. Add hot cocoa mix; stir until dissolved. Set aside.
2. Spoon cream cheese spread into small jar with tight-fitting lid. Add sugar and remaining milk to jar; close lid. Shake jar vigorously until cream cheese mixture is well blended. Add whipping cream; close lid, then shake jar vigorously until cream cheese mixture is frothy.
3. Put marshmallows on top of hot cocoa. Slowly spoon cream cheese foam over marshmallows. Top with crushed candies.

Bang Bang Shrimp Bowls: Sauce: 2 tbsp kewpie mayo

Bang Bang Shrimp Bowls:

Sauce:
2 tbsp kewpie mayo
2 tbsp sweet chili sauce
2 tsp sriracha

-Argentinian Shrimp
-Microwave Brown Rice Packet
-Cucumber
-Edamame

1. Dethaw shrimp and cook over medium heat with olive oil and salt and pepper
2. Mix together ingredients for sauce remove shrimp for pan. Mix into sauce until shrimp is coated.
3. Serve over rice, cucumber, and edamame
4. Optional: top with sesame seeds

7. Fill up 18 plastic shot glasses half full and place in fridge for 3 hours until jello hardens
8. Top with whipped cream and sprinkles

Crockpot Burrito Bowls * 2 large chicken breasts

Crockpot Burrito Bowls

* 2 large chicken breasts
* 1 cup uncooked jasmine rice
* 1 cup chicken broth
* 1 small can of green chilis
* 1 can black beans
* 1 bell pepper, diced
* 1 can fire roasted corn
* 1 can diced tomatoes
* 1 packet taco seasoning

1. Add diced tomatoes, chicken broth, chicken, and half a packet of taco seasoning to a large crockpot
2. Cover and cook on low for 3 hours
3. Then add green chilis, drained black beans, drained fire roasted corn, bell pepper, rice and other half of taco seasoning
4. Cover and cook on low for an additional 2-3 hours. Check the rice every hour and stir it to make sure it does not burn.
5. After 2-3 hours remove the chicken and shred it
6. Divide into meal prep containers if using it for a prep and serve with cilantro and plain greek yogurt or avocado. You can also top it with some cheese!

Higher Protein Tomato Soup - 1 yellow onion, dice

Higher Protein Tomato Soup

- 1 yellow onion, diced
- 1 28 oz can peeled tomatoes
- 2 tsp minced garlic
- ¾ cup cottage cheese
- 3 cups vegetable broth
- 3/4 cup chopped basil
Spices: Oregano, Salt, and Pepper

Grilled Cheese Croutons:
-Sourdough
-Cheddar Cheese
-Butter
-Assemble grilled cheese and toast over medium heat, cut into bite sized pieces and top soup.

1. Add olive oil, onion and minced garlic to a large pot
2. Cook over medium heat until onion is translucent
3. Add in peeled tomatoes, broth, spices, basil, and cottage cheese
4. Mix up and use immersion blender to mix or pour it into a blender. If pouring it into a blender allow it to cool before blending
5. After blended add back to pot and heat over medium heat until bubbling and warm
6. While heating soup make grilled cheese croutons
7. Serve soup with grilled cheese croutons and enjoy!

Chicken Tortellini Soup 1 12 oz package of cheese

Chicken Tortellini Soup

1 12 oz package of cheese tortellini
2 large chicken breasts, cooked and shredded
4 cups chicken broth
1 onion diced (or use Trader Joe’s pre chopped onions, carrots, and celery, they have a mixture with all this in it)
5 big carrots, peeled and diced
5 celery sticks, diced
Spices: paprika, garlic, onion powder, dried basil, dried parsley (Measure with your heart)

- Add celery, onions, and carrots to a large pot with some olive oil
- Saute until onion is translucent and add in broth, seasonings, shredded chicken, and tortellini
- Cover and cook for about 10 minutes until tortellini is cooked
- Serve with warm bread and top with parmesan cheese.

Whipped Brie -8 oz Brie -1/4 cup cottage cheese

-8 oz Brie
-1/4 cup cottage cheese
-1/4 cup chopped pistachios
-Honey
-Fresh Thyme

1. cut off skins of Brie and cut into cubes.
2. Leave out of fridge for 30-45 minutes to come to room temperature before blending. It won’t blend if it’s too cold
3. Add to food processor and blend until grainy
4. Add cottage cheese and blend until smooth
5. Transfer to a dish and top with pistachios, honey, and fresh thyme
6. Serve with crostinis. I like to make mine stove top coating bread slices in olive oil and flipping over medium heat.

Extra Creamy Hot Coco - 1 cup plus 2 Tbsp. Milk,

Extra Creamy Hot Coco

- 1 cup plus 2 Tbsp. Milk, divided
- 2 Tbsp. hot cocoa mix
- 2 Tbsp. Cream Cheese (sounds weird but trust me)
- 2 tsp Coconut sugar or regular cane sugar
- 1 Tbsp. heavy whipping cream
- 3 Marshmallows
- 1 Tbsp. crushed hard peppermint candies

1. Microwave 1 cup milk in large microwaveable mug on HIGH 1 min. or until hot. Add hot cocoa mix; stir until dissolved. Set aside.
2. Spoon cream cheese spread into small jar with tight-fitting lid. Add sugar and remaining milk to jar; close lid. Shake jar vigorously until cream cheese mixture is well blended. Add whipping cream; close lid, then shake jar vigorously until cream cheese mixture is frothy.
3. Put marshmallows on top of hot cocoa. Slowly spoon cream cheese foam over marshmallows. Top with crushed candies.

Bang Bang Shrimp Bowls: Sauce: 2 tbsp kewpie mayo

Sauce:
2 tbsp kewpie mayo
2 tbsp sweet chili sauce
2 tsp sriracha

-Argentinian Shrimp
-Microwave Brown Rice Packet
-Cucumber
-Edamame

1. Dethaw shrimp and cook over medium heat with olive oil and salt and pepper
2. Mix together ingredients for sauce remove shrimp for pan. Mix into sauce until shrimp is coated.
3. Serve over rice, cucumber, and edamame
4. Optional: top with sesame seeds
