Walnut Chickpea Quinoa Salad

Ingredients

  • 1 Cup Uncooked Quinoa
  • 2 Cups Chicken Broth or Water
  • 1/4 Cup Chopped Parsley
  • 1 Lemon, Juiced
  • 1/8 Cup Olive Oil
  • 1/2 tsp Salt
  • 1/2 tsp Garlic Powder
  • 1/4 Cup Chopped Walnuts
  • 1/2 Cup Feta Cheese
  • 1 Medium English Cucumber, cut into fourths
  • 1/2 Red Onion
  • 1 Can Chickpeas

Instructions

  • Cook quinoa in chicken broth or water over medium flame and allow it to simmer for about 8 minutes until fully cooked
  • Chop up veggies and set aside
  • Add quinoa, veggies, chickpeas, seasonings, and olive oil and lemon juice to a dish
  • Mix together and serve throughout the week!
