Bruschetta Chicken Meal Prep

Ingredients

  • 5 chicken thighs or 3 chicken breasts
  • Italian seasoning
  • Garlic Powder
  • Salt & Pepper

Bruschetta

  • 2 cups cherry tomatoes cut in half
  • 1/4 cup Parmesan cheese
  • 1/8 cup cup up basil
  • 1/4 cup red onion cut into small pieces
  • 1 tsp Minced Garlic
  • Salt & Pepper
  • 2 tbsp olive oil
  • 2 tbsp balsamic

Instructions

  • Preheat oven to 425
  • 2. Cover chicken with Italian seasoning, garlic powder, salt and pepper and spray with avocado oil
  • 3. Bake for 25 minutes (if they are chicken breasts cut them in half)
  • 4. Add one cup uncooked pearled couscous to 1.5 cups water and simmer for 8 mins until cooked
  • 5. When cooked add 2 tbsp pesto and mix together
  • 6. Cut cooked chicken into small pieces
  • 7. Add ingredients together for bruschetta listed above (also add in cooked chicken)
  • 8. Mix until well combined
  • 9. Divide bruschetta chicken and pearled couscous into four meal prep containers
  • 10. Enjoy heated up throughout the week
