Pesto Chicken Salad Meal Prep

Ingredients

  • 3 large chicken breasts or 4 small
  • 1/2 cup pesto
  • 1/4 cup plain Greek yogurt
  • 1 cup cherry tomatoes cut in half
  • 4 baby cucumbers
  • Crackers of choice I used sweet potato crackers from Trader Joe’s
  • Salt
  • Pepper
  • Garlic Powder

Instructions

  • Cook and shred chicken your preferred way. For my chicken I used a crockpot on low for 6 hours (or high for 3) with some chicken broth and shredded it with a hand mixer
  • Drain and shred chicken
  • Add pesto, chopped cherry tomatoes, Greek yogurt, salt, pepper, and garlic powder to chicken and mix well
  • Add to four meal prep containers along with chopped baby cucumbers
  • Serve cold throughout the week and with crackers on the side
