Instructions
Cook and shred chicken your preferred way. For my chicken I used a crockpot on low for 6 hours (or high for 3) with some chicken broth and shredded it with a hand mixer
Drain and shred chicken
Add pesto, chopped cherry tomatoes, Greek yogurt, salt, pepper, and garlic powder to chicken and mix well
Add to four meal prep containers along with chopped baby cucumbers
Serve cold throughout the week and with crackers on the side
