Buffalo Turkey Meatball Meal Prep

Ingredients

Meatballs

  • 1 lb Ground Chicken or Ground Turkey
  • 1 Cup Almond Flour
  • 1 Egg
  • 1/4 Cup Chopped Green Onions
  • 1 tsp Garlic Powder

Other Ingredients

  • 2 Zuchinni Chopped into quarters
  • 1 Cup Shredded Carrots
  • 1 Packet Microwaveable Jasmine Rice
  • 1/4 tsp Salt
  • 1 Package Frozen Riced Cauliflower
  • 1/2 Cup Buffalo Sauce of Choice (I used primal kitchen)

Instructions

  • Mix together meatball ingredients above without the Buffalo sauce and form into balls (makes about 20 meatballs)
  • Bake in oven at 400 for 20 minutes
  • After baking transfer meatballs to a bowl and cover with Buffalo sauce of choice
  • Microwave jasmine rice packet and riced cauliflower and combine in a bowl with some salt
  • Cut up zucchini and sauté in a pan with shredded carrots. Topped with salt & avocado oil
  • Cook for 6 minutes over medium heat, stirring as you cook
  • Place rice mixture into 4 meal prep containers
  • Add in zucchini and carrot mixture
  • Place 5 meatballs into each container
  • Optional: Drizzle more Buffalo sauce on top of meatballs
