Cauliflower Gnocchi Meal Prep 4 Ways

Ingredients

  • 4 Chicken Sausages
  • 2 Bags Frozen Cauliflower Gnocchi (If you don't have a trader joes near by use chickpea noodles instead and add them to the mixture fully cooked at the end)
  • 1 Head Broccoli
  • 1 tsp Garlic Powder
  • 2 tbsp Olive Oil
  • Cup Pesto Sauce
  • Cup Alfredo Sauce
  • Cup Marinara Sauce
  • Cup Romesco Sauce

Instructions

  • Preheat oven to 425
  • Chop broccoli into bite sized pieces and add to a baking dish
  • Cut sausage into quarters and add to dish as well
  • Add cauliflower gnocchi to dish
  • Cover in olive oil and garlic powder. Bake at 425 for30 minutes
  • Portion into 4 meal prep containers
  • Add sauce of choice to each container and put lid on
  • Shake container until mixture is coated with sauce!
  • Enjoy different flavors throughout the week
