Buffalo Turkey Meatball Meal Prep

Microwaveable Jasmine Rice

Buffalo Sauce of Choice
(I used primal kitchen)
Instructions
Mix together meatball ingredients above without the Buffalo sauce and form into balls (makes about 20 meatballs)
Bake in oven at 400 for 20 minutes
After baking transfer meatballs to a bowl and cover with Buffalo sauce of choice
Microwave jasmine rice packet and riced cauliflower and combine in a bowl with some salt
Cut up zucchini and sauté in a pan with shredded carrots. Topped with salt & avocado oil
Cook for 6 minutes over medium heat, stirring as you cook
Place rice mixture into 4 meal prep containers
Add in zucchini and carrot mixture
Place 5 meatballs into each container
Optional: Drizzle more Buffalo sauce on top of meatballs
