Cava at Home Meal Prep

The sauce I used is herbed tahini but you could use hummus or tzatziki on the side.
Servings 4 Lunches

Ingredients

Corn Salad

  • -1 can roasted corn drained
  • -1 cup cherry tomatoes cut in half
  • -1/2 cup feta in brine removed from brine and crumbled
  • -1 cup English cucumber cut into fourths
  • -Salt & Pepper
  • -Garlic Powder

Rice

  • 1 Cup Uncooked Brown Rice

Chicken

  • 5 boneless skinless chicken thighs
  • - 1/2 tbsp Cumin
  • - 1/2 tbsp Garlic
  • - 1/2 tbsp Lemon pepper
  • - 1/2 tsp Cayenne
  • - 1/2 tbsp Paprika
  • - 1/4 tsp cinnamon
  • - 1/2 tbsp Chili powder
  • - 1/4 tsp Salt

Instructions

  • Cut up and mix together ingredients for corn salad and set aside
  • Season chicken and bake in oven at 425 for 25 minutes
  • Add cup of brown rice to a pot with two cups of water and simmer until water soaks up brown rice
  • Assemble four meal prep containers with chicken, brown rice, and corn salad. Serve with herbed tahini.
  • I microwave this for 40 seconds to heat it up a bit but not make the cucumbers and tomatoes too warm. You could also eat this cold!
