Southwest Sweet Potato Hash Meal Prep

Ingredients

  • - 2 large sweet potatoes
  • - 1lb grass fed ground beef or ground Turkey
  • - 1/2 yellow onion
  • - 1 can corn drained and rinsed
  • - 1 can black beans drained and rinsed
  • - 1 small can green chilis
  • - 1 can diced tomatoes
  • - 1 packet taco seasoning
  • - Olive oil
  • Toppings:
  • Cheese
  • Cilantro
  • Avocado

Instructions

  • Add ground beef to a pan with 1/2 packet taco seasoning and olive oil, cook over medium heat until fully cooked through
  • Set aside
  • Cut up sweet potatoes into small pieces, the smaller the pieces the easier it cooks
  • Add sweet potato to an olive oil lined pan with corn, black beans, green chilis, onion, diced tomatoes, and other half of taco seasoning
  • Mix, Cover, and simmer on medium heat for 15-20 minutes, until sweet potatoes are soft.
  • Once sweet potatoes are soft add ground beef to mixture and mix together
  • Divide into four meal prep containers
  • Top with cheese, cilantro, and avocado (add avocado day of before eating so it doesn’t brown)
  • Microwave for 45 seconds before eating and enjoy throughout the week
