Tofu Spring Rolls

Ingredients

  • Tofu: pressed seasoned with salt and pepper, and seared in a pan with sesame oil
  • Purple cabbage
  • Cilantro
  • Spring Roll Rice Paper
  • Shredded Carrots
  • Avocado
  • Butter Lettuce

Tahini Dipping Sauce

  • Mix together the following
  • 1/4 cup warmed peanut butter or tahini
  • 1/4 cup water
  • 3 tbsp coconut aminos or soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 Tsp garlic
  • 1/2 tsp sriracha

Instructions

  • Season tofu and cut into long pieces, sear in a pan with sesame oil on each side until browned
  • Get spring roll wet and place on table
  • Layer roll with tofu, avocado, purple cabbage, carrots, cilantro, and lettuce
  • Fold roll up
  • Create as many more rolls as you would like repeating the steps above
  • Mix together peanut sauce and serve with rolls
