White Chicken Chili

Ingredients

  • 2 cans of white northern beans drained and rinsed
  • 3 chicken breasts- cooked and shredded
  • 2 4 oz cans mild chopped green Chili’s
  • 1 can corn drained and rinsed
  • 4 garlic cloves minced
  • 1 large yellow onion chopped
  • 2 tsp cumin
  • 1/4 tsp cayenne
  • 1 tsp oregano
  • 4 cups chicken stock
  • 1 tbsp olive oil

Instructions

  • Add olive oil and onion to large pot, cook until translucent
  • Add spices and cook for three minutes add everything else and simmer for 15 minutes (optional to add half a cup of Monterey jack cheese to simmer with chili makes it more creamy)
  • Top with your favorite toppings like plain Greek yogurt, avocado, jalapeños, cheese, and Fritos
