Homemade Chipotle Bowls

Ingredients

Bowl Details

  • bed of lettuce
  • chipotle chicken
  • cilantro lime rice
  • pico de gallo
  • copy cat corn salsa
  • smashed avocado

Chipotle Chicken Marinade

  • 2 cloves garlic
  • 1 chipotle chili pepper in adobo sauce
  • 2 tbsp. lime juice
  • 1 tbsp adobo sauce
  • 2 tsp. chili powder
  • 1 tsp. oregano
  • 1 tbsp. olive oil
  • salt & pepper

Corn Salsa

  • 1.5 cans corn
  • 1/2 cup cilantro
  • 1 lime juiced
  • 1/2 red onion chopped
  • salt

Cilantro lime rice

  • 1 cup jasmine rice
  • 1 lime juiced
  • 1/2 cup cilantro chopped
  • salt

Instructions

Chipotle Chicken

  • Blend together ingredients to make chipotle marinade
  • Combine marinade with 2 large chicken breasts in a bag and marinade overnight
  • Once marinadeds cut up chicken into pieces and saute in pan over mediiumheat with olive oil until cooked through.

Corn Salsa

  • Combine all ingredients for corn salsa and stir together

Chipotle Lime Rice

  • Cook rice according to package (I use microwaveable rice packets to make it easier)
  • Add cilantro, lime juice, and salt
  • Stir together

Bowl

  • Assemble your bowl with lettuce, rice, pico de gallo, corn salsa, smashed avocado, and chicken
