Pesto Sheet Pan Meal Prep

Servings 4 Lunches

Ingredients

  • 2 Large Chicken Breasts Cut into Cubes
  • 1 Zucchini
  • 1 Head Broccoli
  • 1/2 Mini Container Cherry Tomatoes
  • 1 Small Container Chopped Mushrooms
  • 1/4 Cup Pesto I used Trader Joes Vegan Pesto
  • 1/2 tsp Salt
  • 1 Cup Uncooked Quinoa

Instructions

  • Chop up veggies and chicken and place in a large bowl
  • Mix in pesto and stir together until veggies and chicken are coated
  • Add to baking dish and bake at 400 for 25 minutes
  • While veggies and chicken are cooking add 1 cup quinoa and 2 cups water to a medium sized pan
  • Bring water to a boil with quinoa in it and then cover with lid and move heat to a simmer (takes about 8 minutes to cook)
  • Place cooked veggies and chicken into 4 meal prep containers
  • Add 1/2 cup quinoa to each container as well
