Pesto Sheet Pan Meal Prep

I used Trader Joes Vegan Pesto

Uncooked Quinoa
Instructions
Chop up veggies and chicken and place in a large bowl
Mix in pesto and stir together until veggies and chicken are coated
Add to baking dish and bake at 400 for 25 minutes
While veggies and chicken are cooking add 1 cup quinoa and 2 cups water to a medium sized pan
Bring water to a boil with quinoa in it and then cover with lid and move heat to a simmer (takes about 8 minutes to cook)
Place cooked veggies and chicken into 4 meal prep containers
Add 1/2 cup quinoa to each container as well
