Pesto Chicken Bowl

Ingredients

  • 2 Small Chicken Breasts
  • 1 tbsp Olive Oil
  • 1/2 tsp Salt
  • 1/2 tsp Pepper
  • 1 Cup Cooked Jasmine Rice
  • 1/2 Cup Cherry Tomatoes Diced
  • 1/4 Cup Pesto of Choice (I like the vegan pesto from Trader Joes)

Instructions

  • Add some olive oil to a pan and heat over medium heat until oil is hot
  • Add in chicken breast (smaller chicken breasts work best)
  • Top with salt and pepper and cook through on each side
  • Microwave jasmine rice packet or use your preferred method of rice cooking
  • Divide into two bowls
  • Pair with chicken, spinach, cherry tomatoes and top the whole bowl with pesto!
