Red Pepper Chicken Meal Prep

Ingredients

  • 3 Chicken Breasts
  • 1 tbsp Olive Oil
  • 1 Cup Uncooked Pearled Couscous (I used neareast olive oil and garlic one)
  • 1 Seedless Cucumber
  • 1 Cup Cherry Tomatoes
  • 1/4 Red Onion
  • 1/2 Block Feta (in brine)

Red Pepper Sauce

  • 1 Cup Jarred Red Bell Pepper Drained
  • 1/3 Cup Chicken Stock
  • 1/4 Cup Grated Parmesan Cheese
  • 1/4 Cup Fresh Basil
  • 6 oz Low Fat Cream Cheese

Instructions

  • Cook chicken in pan over medium heat with olive oil, salt, and pepper until cooked through
  • While chicken is cooking chop up your cucumbers, tomatoes, red onion and add to a bowl with some salt
  • Cook pearled couscous according to package
  • Let it cool a little and then add it to cucumber tomato mixture and stir
  •  Make red pepper sauce by mixing together ingredients under red pepper sauce and blending it in a blender until smooth
  • Assemble bowl with couscous salad, feta, chicken, and top chicken with red pepper sauce
  • Store in fridge for 4 days. If storing longer, put in freezer for best keep
  • On the day of eating it. Heat in microwave for 30 seconds. Mix and microwave for 30 more seconds!
