Pesto Protein Pasta

Ingredients

  • 1 8oz Package of Protein Pasta (I used Barilla)
  • 3 Handfuls Arugula
  • 1 Cup Chopped Asparagus
  • 1 Large Zucchini Chopped
  • 1/2 Cup Pesto
  • 4 Chicken Sausage of Choice
  • 1 tbsp Olive Oil
  • 1/2 tsp Salt

Instructions

  • Boil a pot of water and cook noodles according to package
  • Chop up zucchini, asparagus, and chicken sausage (don't forget to break the ends of the asparagus before chopping)
  • Saute asparagus and zucchini in a pan with olive oil and salt over medium heat until cooked evenly
  • Strain the noddles
  • Combine noodles and veggie and sausage mixture
  • Add arugula and mix
  • Add pesto and mix together
  • Store in fridge for up to 4 days or serve day of. This would be an easy meal prep too!
