Egg Roll Bowl Meal Prep

Ingredients

  • 1 Large Bag of coleslaw (can use two small bags if they don’t have the family size at your store)
  • 1 tbsp Olive Oil
  • 1 lb Turkey Sausage
  • 1 ½ Cup Shredded Carrots
  • 1 tbsp Minced Garlic
  • 3 tbsp Coconut Aminos
  • 1/2 tbsp Red Pepper Flakes
  • 1 tbsp Minced Ginger
  • 1/2 Cup Green Onions

Bowl Base

  • 1 Package Frozen Cauliflower
  • 1 Package Trader Joes Microwaveable Rice Packet (You can use any microwave rice packet of choice or regular rice)
  • Sesame Seed to top

Instructions

  •  Place olive oil in large pan with garlic and turkey sausage
  • Break up turkey sausage with spatula as it cooks in the pan over medium heat
  • Once cooked through add in slaw, carrots, and the rest of the fixings (green onions, red pepper flakes, ginger, and coconut aminos)
  • Let it simmer covered over medium heat stirring occasionally
  • Once slaw begins to wilt it is ready
  • Microwave rice packet and riced cauliflower and combine
  • Place rice and egg roll mixture into 5 meal prep containers
