Chipotle Steak Bowls

Ingredients

  • 2 lbs Skirt Steak
  • 1 Yellow Onion
  • 2-3 Bell Peppers
  • Fajita Seasoning Store Bought
  • 1/2 Cup Plain Greek Yogurt For Serving

Cilantro Lime Rice Mixture

  • 1 Cup Jasmine Rice
  • 1 Cup Riced Cauliflower
  • 1/2 Cup Chopped Cilantro
  • Juice from 1/2 Lime
  • 1 tsp Salt

Corn Salsa

  • 1 Can Corn Drained and Rinsed
  • 1/2 Red Onion Diced
  • 1 Jalapeno
  • 1/4 Cup Cilantro Chopped
  • 1 tsp Salt
  • 1 tsp Garlic Powder
  • Juice from 1/2 Lime

Instructions

  • Season cut up steak with fajita seasoning and sauté in pan with olive oil until cooked
  • Cut up pepper and onions and season with taco seasoning or fajita seasoning (the pre made ones make it easy) and sauté until cooked through
  • Cook your rice and make your corn salsa and then assemble your bowls
  • Assemble your bowl with Rice, Corn salsa, Steak, Peppers & Onions, Greek Yogurt
