Greek Turkey Meatball Meal Prep

Servings 4 Lunches

Ingredients

  • 1 cup Tzatziki dip of choice

Turkey Meatballs

  • 1 lb Ground Turkey
  • 1/2 Cup Almond Flour
  • 1 Egg
  • 1 tsp Garlic Powder
  • 1/4 Cup Finely Chopped Feta
  • 1 tsp Parsley
  • 1 tsp Lemon Pepper

Greek Pasta Salad

  • 1 Large Seedless Cucumber
  • 1 Small Box Cherry Tomatoes
  • 1/2 Block Feta in Brine drained and broken up
  • 1/2 Small Red Onion, diced
  • 1 tbsp Olive Oil
  • 2 tsp Red Wine Vinegar
  • 1/2 tsp Salt
  • 1/2 tsp Garlic powder

Instructions

  • Combine ingredients for meatballs and roll into balls
  • Place on tinfoil covered pan
  • Bake at 400 for 25 minutes
  • While meatballs are baking chop up veggies for salad
  • Combine veggies, oil, and seasonings listened above in bowl
  • Place salad and meatballs into four meal prep containers
  • Divide up tzatziki and place into four separate mini sauce dishes.
  • *heating tip. When ready to eat. Take out the meatballs and place them on the container lid. Only heat up the meatballs and add them back to the dish.*
