Pesto Protein Pasta

Ingredients
- 1 8oz Package of Protein Pasta (I used Barilla)
- 3 Handfuls Arugula
- 1 Cup Chopped Asparagus
- 1 Large Zucchini Chopped
- 1/2 Cup Pesto
- 4 Chicken Sausage of Choice
- 1 tbsp Olive Oil
- 1/2 tsp Salt
Instructions
- Boil a pot of water and cook noodles according to package
- Chop up zucchini, asparagus, and chicken sausage (don't forget to break the ends of the asparagus before chopping)
- Saute asparagus and zucchini in a pan with olive oil and salt over medium heat until cooked evenly
- Strain the noddles
- Combine noodles and veggie and sausage mixture
- Add arugula and mix
- Add pesto and mix together
- Store in fridge for up to 4 days or serve day of. This would be an easy meal prep too!
