White Chicken Chili

Ingredients

  • 3 cans white northern beans
  • 3 chicken breasts cooked and shredded
  • 2 4oz cans mild chopped green chilis
  • 4 cups chicken stock
  • 2 medium yellow onions chopped
  • 1 tbsp olive oil
  • 2 tsp cumin
  • 1/4 tsp cayenne
  • 1 tsp oregano
  • 4 garlic cloves minced

Instructions

  • Add olive oil and chopped onion and garlic to a large pot and cook over medium heat until onions become translusent
  • Add spices and cook for three minutes
  • Add everything else and simmer for 15 minutes
  • Optional step for extra creaminess (add a half cup of monterey jack cheese and summer with chili)
  • Serve with corn bread or toppings of choice (I love to add a scoop of plain greek yogurt to the top of mine)
