Pesto Chicken Salad Meal Prep
Ingredients
- 3 large chicken breasts or 4 small
- 1/2 cup pesto
- 1/4 cup plain Greek yogurt
- 1 cup cherry tomatoes cut in half
- 4 baby cucumbers
- Crackers of choice I used sweet potato crackers from Trader Joe’s
- Salt
- Pepper
- Garlic Powder
Instructions
- Cook and shred chicken your preferred way. For my chicken I used a crockpot on low for 6 hours (or high for 3) with some chicken broth and shredded it with a hand mixer
- Drain and shred chicken
- Add pesto, chopped cherry tomatoes, Greek yogurt, salt, pepper, and garlic powder to chicken and mix well
- Add to four meal prep containers along with chopped baby cucumbers
- Serve cold throughout the week and with crackers on the side
