Pesto Chicken Bowl

Ingredients
- 2 Small Chicken Breasts
- 1 tbsp Olive Oil
- 1/2 tsp Salt
- 1/2 tsp Pepper
- 1 Cup Cooked Jasmine Rice
- 1/2 Cup Cherry Tomatoes Diced
- 1/4 Cup Pesto of Choice (I like the vegan pesto from Trader Joes)
Instructions
- Add some olive oil to a pan and heat over medium heat until oil is hot
- Add in chicken breast (smaller chicken breasts work best)
- Top with salt and pepper and cook through on each side
- Microwave jasmine rice packet or use your preferred method of rice cooking
- Divide into two bowls
- Pair with chicken, spinach, cherry tomatoes and top the whole bowl with pesto!
