Greek Turkey Meatball Meal Prep
Servings 4 Lunches
Ingredients
- 1 cup Tzatziki dip of choice
Turkey Meatballs
- 1 lb Ground Turkey
- 1/2 Cup Almond Flour
- 1 Egg
- 1 tsp Garlic Powder
- 1/4 Cup Finely Chopped Feta
- 1 tsp Parsley
- 1 tsp Lemon Pepper
Greek Pasta Salad
- 1 Large Seedless Cucumber
- 1 Small Box Cherry Tomatoes
- 1/2 Block Feta in Brine drained and broken up
- 1/2 Small Red Onion, diced
- 1 tbsp Olive Oil
- 2 tsp Red Wine Vinegar
- 1/2 tsp Salt
- 1/2 tsp Garlic powder
Instructions
- Combine ingredients for meatballs and roll into balls
- Place on tinfoil covered pan
- Bake at 400 for 25 minutes
- While meatballs are baking chop up veggies for salad
- Combine veggies, oil, and seasonings listened above in bowl
- Place salad and meatballs into four meal prep containers
- Divide up tzatziki and place into four separate mini sauce dishes.
- *heating tip. When ready to eat. Take out the meatballs and place them on the container lid. Only heat up the meatballs and add them back to the dish.*
