Chicken Fajita Salads

Ingredients
- 3 chicken breasts
- 3 bell peppers
- 1 yellow onion
- 1 packet taco seasoning
- 2 tbsp olive oil
- salad mix for base
Mexican Greek Yogurt Dressing
- 1 cup plain greek yogurt
- 1/4 cup salsa
- 1 tbsp taco seasoning saved from packet
Instructions
- cut up your chicken into bite sized pieces or strips
- sauté the chicken with 1/2 the taco seasoning packet and olive oil over medium heat until cooked through
- while that is cooking…chop your peppers and onion!
- sauté the veggies in a separate pan with olive oil and the other half of the taco seasoning (save some taco seasoning for the dressing if you don’t have extra)
- sauté until softened and combine with the chicken
- place meal prep containers out and line the bottom with spring mix
- top salad with fajita mixture
- blend up the ingredients for the dressing in a blender and stew in mason jar to use throughout the week
