Sweet Potato Brownies

You will never believe that there are sweet potatoes in these brownies. They are so moist and fluffy!

Cook Time 1 hour

Ingredients

  • 1/2 cup almond flour
  • 1 medium sweet potato baked and skin removed
  • 1/4 cup almond butter
  • 2/3 cup coconut sugar
  • 2 eggs
  • 1/4 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • pinch of sea salt
  • 1/2 cup dairy free chocoalte chips for the top

Instructions

  • Preheat oven to 350°
  • Poke holes in your sweet potato and bake in the oven for 60 mins or microwave for 5 minutes
  • Combine all ingredients into a food processor and blend together (except for chocolate chips)
  • Line a 8×8 pan with parchment paper and pour in batter
  • Top with chocolate chips
  • Bake for 35-40 minutes
  • Optional- top with sea salt flakes
  • Allow brownies to fully cool before cutting them
