cut up your chicken into bite sized pieces or strips
sauté the chicken with 1/2 the taco seasoning packet and olive oil over medium heat until cooked through
while that is cooking...chop your peppers and onion!
sauté the veggies in a separate pan with olive oil and the other half of the taco seasoning (save some taco seasoning for the dressing if you don’t have extra)
sauté until softened and combine with the chicken
place meal prep containers out and line the bottom with spring mix
top salad with fajita mixture
blend up the ingredients for the dressing in a blender and stew in mason jar to use throughout the week
