Chicken Enchilada Soup

Ingredients
- 3 Large Chicken Breasts
- 1 Can Black Beans
- 1 Can Corn
- 2 Cans Diced Tomatoes
- 1 Small Can Green Chilis
- 1/4 Cup Dairy Free Cream Cheese
- 1/2 Cup Enchilada Sauce
- 2 Cups Chicken Broth
- 1/2 Yellow Onion Diced
- 1 tsp Garlic Powder
Instructions
- In a large pot sauté onions with garlic powder
- Add in chicken broth, corn, black beans, diced tomatoes, green chilis, enchilada sauce, and uncooked chicken breast
- Cover and simmer for 15 minutes
- Remove cooked chicken and shred then add back to the broth
- Add dairy free cream cheese and stir until melted (can use Greek yogurt as a substitute as well)
- Optional: top with jalapeños, cilantro, and cheese or toppings of your choice
