Chicken Enchilada Soup

Instructions
In a large pot sauté onions with garlic powder
Add in chicken broth, corn, black beans, diced tomatoes, green chilis, enchilada sauce, and uncooked chicken breast
Cover and simmer for 15 minutes
Remove cooked chicken and shred then add back to the broth
Add dairy free cream cheese and stir until melted (can use Greek yogurt as a substitute as well)
Optional: top with jalapeños, cilantro, and cheese or toppings of your choice
