Chicken Enchilada Soup

Ingredients

  • 3 Large Chicken Breasts
  • 1 Can Black Beans
  • 1 Can Corn
  • 2 Cans Diced Tomatoes
  • 1 Small Can Green Chilis
  • 1/4 Cup Dairy Free Cream Cheese
  • 1/2 Cup Enchilada Sauce
  • 2 Cups Chicken Broth
  • 1/2 Yellow Onion Diced
  • 1 tsp Garlic Powder

Instructions

  • In a large pot sauté onions with garlic powder
  •  Add in chicken broth, corn, black beans, diced tomatoes, green chilis, enchilada sauce, and uncooked chicken breast
  • Cover and simmer for 15 minutes
  • Remove cooked chicken and shred then add back to the broth
  • Add dairy free cream cheese and stir until melted (can use Greek yogurt as a substitute as well)
  • Optional: top with jalapeños, cilantro, and cheese or toppings of your choice
