Meal Prepped Egg Sandwiches

Servings 5 Sandwiches

Ingredients

  • 5 English muffins
  • 7 eggs
  • 1/2 cup egg whites
  • 2 tbsp chives
  • Salt& Pepper
  • 5 pieces of Canadian bacon
  • 2 avocados
  • 3 pieces of cheese cut in fourths

Instructions

  • Preheat oven to 350
  • Mix together eggs and egg whites into an 8×8 avocado oil sprayed dish
  • Add in chives and seasonings
  • Bake in oven for 40 minutes
  • Assemble sandwiches
  • Bread, avocado, cheese, Canadian bacon
  • When eggs are done cooking cut into six sections (only making five sandwiches for the week so you’ll have an extra piece of egg)
  • Add an egg slice to each sandwich
  • Fold together and cover with parchment paper
  • Individually wrap each one and transfer it to an air tight sealed container
  • I eat these Monday-Friday and if it’s in an air tight container it holds up well.
  • Also when I reheat I only reheat the top part. I do not reheat the bottom bun with avocado smash. So I take the sandwich apart to reheat.
