Buddha Bowl

Servings 2 Bowls

Ingredients

  • 1 sweet potato
  • 2 chicken sausages
  • 1 pepper
  • 1 zucchini
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1/4 tsp pepper

Maple Tahini Sauce

  • 2 tbsp olive oil
  • 2 tbsp tahini
  • 1 tsp Dijon mustard
  • 2 tsp lemon juice
  • 1 tsp maple syrup
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 tbsp water can add more

Instructions

  • Cut up veggies and chicken sausage and coat in olive oil and seasonings
  • Add to a pan and bake at 350 for 35 minutes
  • Blend together maple tahini sauce in blender
  • Serve over arugula and top with desired amount of sauce and top with avocado.
