Zucchini Ground Turkey Meal Prep
Sometimes you have to stick to the basics to create a delisciousbut healthy lunch.
Ingredients
- 3 zucchini chopped
- t tbsp olive oil
- 1 tbsp sea salt
- 1 cup jasmine rice dry
- 2 cups water
- 1 lb ground turkey
- 2 tbsp taco seasoning
Instructions
- Cut up zuchinni and saute in a medium sauce pan with olive oil and sea salt for 10 minutes
- While zuchini is cooking add ground turkey and taco seasoning to a seperate dish and cook over medium heat until cooked through
- Place jasmine rice and water in a pot and bring to a simmer
- Reduce the heat to low, and let the rice simmer for another 9 to 10 minutes, until all the water has been absorbed
- Combine rice, zuchinni, and ground turkey into 4 meal prep containers!
