12 eggs
1/2CupShredded Cheese
1/2Cupdiced yellow onions
1tspgarlic
1lbturkey sausagecan use pork or any breakfast sausage
Salt
Pepper
Red Pepper Flakes
Instructions
Add 1 tbsp avocado oil and chopped onion to a large sauce pan with garlic and heat over medium heat for 5 minutes
Once onion starts to turn translucent add in turkey sausage and break up until in crumbles
Cook until no longer pink
*STRAIN OUT EXCESS WATER OR OIL FROM PAN AT THIS POINT*
Add in cracked eggs one by one and mix while adding eggs in (I don’t mix the eggs before hand in a bowl)
Add in salt, pepper, and red pepper flakes to cooking eggs
When almost cooked fully add in cheese
Heat tortillas together for 45 seconds in the microwave (this allows you to fold them without them breaking)
Add egg mixture to the inside of the tortillas and fold
Transfer burrito to tinfoil for easy storage. Good in fridge for 3-4 days.
You can freeze these as well. Just pop one out of the freezer morning you’re going to eat it. Remove from tinfoil. And microwave for 1 minute. Check temp and microwave for an additional 30 seconds. If not frozen just reheat for 45 seconds in the morning without the tinfoil.
