Sweet Potato Brownies
You will never believe that there are sweet potatoes in these brownies. They are so moist and fluffy!
Ingredients
- 1/2 cup almond flour
- 1 medium sweet potato baked and skin removed
- 1/4 cup almond butter
- 2/3 cup coconut sugar
- 2 eggs
- 1/4 cup unsweetened cocoa powder
- 1 tsp baking soda
- pinch of sea salt
- 1/2 cup dairy free chocoalte chips for the top
Instructions
- Preheat oven to 350°
- Poke holes in your sweet potato and bake in the oven for 60 mins or microwave for 5 minutes
- Combine all ingredients into a food processor and blend together (except for chocolate chips)
- Line a 8×8 pan with parchment paper and pour in batter
- Top with chocolate chips
- Bake for 35-40 minutes
- Optional- top with sea salt flakes
- Allow brownies to fully cool before cutting them
