Puppy Chow Snowballs

Ingredients

  • 3 cups corn Chex crushed
  • 1 cup creamy peanut butter
  • 2 1/4 cup dairy free dark chocolate
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract

Coating

  • -1/2 cup powdered sugar

Instructions

  • Pour chex mix into a bag and mash it into tiny pieces
  • Pour into a bowl
  • Microwave peanut butter for 30 seconds and pour into cereal mixture
  • Add vanilla extract and powdered sugar and mix together
  • Form into balls and place in freezer for 15 minutes to firm up
  • Melt chocolate and coconut oil in the microwave at
  • 30 second intervals, stir each time until fully melted
  • Cover truffles with chocolate
  • Place back in freezer for 15 minutes
  • Roll balls in powdered sugar and serve
  • Store at room temperature
