Pineapple Pulled Pork

What I love most about this pressure cooker is the simplicity. Growing up my Mom used her slow cooker for most of our dinners. This is like similar but the cooking time is much faster 70% faster. Easy for a quick meal when there isn’t much time. As many of you know, I try to share easy and healthy recipes. This pressure cooker brings easy to a whole new level! I really liked how quick it cooked the pork and how easy it was to shred after cooking. Pulled pork is one of my favorite things to make in this instant pot. I usually get the carnitas from Aldi but decided to add my own twist to a classic recipe with a summer twist to it! Adding the pineapple gives the pork a burst of flavor and this would be great for your next gathering, poolside party, or family dinner.  

Pineapple Pulled Pork

Equipment

  • 1 Pressure Cooker

Ingredients

Pulled Pork

  • 2 lbs Pork Shoulder cut into 2 inch cubes
  • 1/2 Cup Pineapple Juice
  • 1/2 Cup Pineapple Chunks
  • 2/3 Cup BBQ Sauce of Choice
  • 2 Tsp Salt
  • 1 Tbsp Minced Garlic
  • 1 Tsp Paprika
  • 1 Tsp Liquid Smoke (Optional)

Coleslaw

  • 2 Cups Broccoli Slaw
  • 1/2 Cup Mayonaise
  • 1 Tsp Salt
  • 1 Tsp Pepper
  • 1 Tbsp Pineapple Juice

Serving

  • 12 Hawaiian Rolls

Instructions

  • Cut up pork into 2 inch pieces
  • Add pork, spices, pineapples, pineapple juice, and ½ cup bbq sauce to pressure cooker
  • Be careful not to fill your pressure cooker too high because it will leak when released if filled with liquid. As the meat cooks it produces extra juices
  • Lock lid into place and pressure cook on high for 35 minutes
  • Open the steam release valve to quickly release
  • Shred pork with fork after natural release
  • Drain juices and add pork to a separate bowl
  • Cover pork with remaining bbq sauce
  • Mix together coleslaw mixture in separate bowl
  • Create sandwiches with Hawaiian rolls, pork, and coleslaw and enjoy!
