Pesto Sheet Pan Meal Prep
Servings 4 Lunches
Ingredients
- 2 Large Chicken Breasts Cut into Cubes
- 1 Zucchini
- 1 Head Broccoli
- 1/2 Mini Container Cherry Tomatoes
- 1 Small Container Chopped Mushrooms
- 1/4 Cup Pesto I used Trader Joes Vegan Pesto
- 1/2 tsp Salt
- 1 Cup Uncooked Quinoa
Instructions
- Chop up veggies and chicken and place in a large bowl
- Mix in pesto and stir together until veggies and chicken are coated
- Add to baking dish and bake at 400 for 25 minutes
- While veggies and chicken are cooking add 1 cup quinoa and 2 cups water to a medium sized pan
- Bring water to a boil with quinoa in it and then cover with lid and move heat to a simmer (takes about 8 minutes to cook)
- Place cooked veggies and chicken into 4 meal prep containers
- Add 1/2 cup quinoa to each container as well
