Pesto Quinoa Salad

Ingredients

  • 1 cup uncooked quinoa
  • 1 can chickpeas drained and rinsed
  • 1/4 cup pesto
  • 1 cup chopped cherry tomatoes
  • 1/2 English cucumber cut into quarters
  • 1/2 cup feta Cheese in brine tastes best
  • 1/2 red onion finely chopped
  • Salt & Pepper

Instructions

  • Add one cup quinoa to a pot with two cups water
  • Cook over medium heat for about 8 minutes until the quinoa soaks up the water (you can also use broth to cook it in to add more flavor)
  • Chop up veggies and mix into quinoa
  • Add in cheese, pesto, chickpeas, and spices
  • Mix until well combined
