Pesto Quinoa Salad

Ingredients
- 1 cup uncooked quinoa
- 1 can chickpeas drained and rinsed
- 1/4 cup pesto
- 1 cup chopped cherry tomatoes
- 1/2 English cucumber cut into quarters
- 1/2 cup feta Cheese in brine tastes best
- 1/2 red onion finely chopped
- Salt & Pepper
Instructions
- Add one cup quinoa to a pot with two cups water
- Cook over medium heat for about 8 minutes until the quinoa soaks up the water (you can also use broth to cook it in to add more flavor)
- Chop up veggies and mix into quinoa
- Add in cheese, pesto, chickpeas, and spices
- Mix until well combined
