Teriyaki Chicken Meatballs

Ingredients
Chicken Meatballs
- 1 lbs Ground Chicken
- 1/2 cup Almond Flour (add more if chicken is not forming into balls)
- 1 Egg beaten
- 1/4 cup Green Onions
- 1 tbsp Ginger
- 1 tbsp Minced Garlic
- 1 tbsp Coconut Aminos
- 1 tsp Salt
- 1 tsp Pepper
- 2 tsp Sriracha
Bowl ingredients
- 2 Cups Jasmine Rice
- 2 Zucchini
- 1/3 Cup Teriyaki
Instructions
Chicken Meatballs
- Preheat oven to 400°
- Combine chicken meatball ingredients in a bowl and form into meatball shapes.
- Place on baking sheet with tin foil and bake for 25 minutes
Bowl
- Cook rice according to package
- Coat chopped zucchini with salt
- Sauté in a pan over medium heat with some olive oil
- Separate into portions or allow people to create their own bowls
- Top with teriyaki sauce
