Healthier Tag-A-Long Girl Scout Cookies

Ingredients

Cookie

  • 1 cup almond flour
  • 3 tbsp maple syrup
  • tbsp coconut oil melted
  • 1 tsp vanilla extract

Peanut Butter Filling

  • 4 tbsp peanut butter
  • ½ tbsp maple syrup
  • ½ tbsp honey

Chocolate topping

  • 1 cup dark chocolate
  • 1 tsp coconut oil

Instructions

Cookies

  • Preheat oven to 350°
  • Combine ingredients listed in the cookie section above
  • Shape into balls and flatten on baking sheet
  • Use your thumb to put a dent into the middle of each cookie for the peanut butter filling
  • Do not put the peanut butter in yet, the cookie needs to be cooked first
  • Bake for 13-15 minutes
  • Allow them to completely cool before adding peanut butter filling

Peanut Butter Filling

  • Combine peanut butter ingredients listed above to create the filling
  • Add 1 tsp of the peanut butter filling to the center of each cookie
  • Place in freexer for 15 minutes to cool cookies

Chocolate Coating

  • After the freezer, melt the chocolate
  • Combine your chocolate and coconut oil and microwave in increments of 30 seconds, stirring each time until melted
  • Cover each cookie in chocolate by placing it in the bowl and using a spoon to cover it
  • Once coated place cookies back in freezer for 20 minutes
  • Take out and enjoy!
