Fall Orzo Meal Prep
Ingredients
- 1 cup uncooked orzo
- 3 cups water
- 2 bags shaved Brussel sprouts
- 2 cups butternut squash
- 1/2 mini log of goat cheese
- 5 oz packet of Diced prosciutto or pancetta
- Olive oil
- Salt & Pepper
- Dressing:
- 1/4 cup olive oil
- 1/8 cup water
- 1 tsp Dijon mustard
- 1 tbsp maple syrup
- Salt
- Pepper
- Onion Powder
Instructions
- Preheat oven to 350
- Coat Brussels and butternut squash cubes with olive oil, salt, and pepper
- Bake for 45 minutes
- Add orzo to a pot with 3 cups water and cook for 8 minutes until liquid is absorbed
- While that is cooking add prosciutto to a small pan and sauté until browned
- In a mason jar mix together dressing
- Mix together veggies, orzo, goat cheese, and prosciutto
- Cover with dressing mixture and mix together until orzo salad is coated with dressing
- Divide into four meal prep containers and enjoy
- I heat mine up for a 1 min and 30 seconds before I eat! So I eat it hot but you can also eat it cold.
