Preheat oven to 350
Coat Brussels and butternut squash cubes with olive oil, salt, and pepper
Bake for 45 minutes
Add orzo to a pot with 3 cups water and cook for 8 minutes until liquid is absorbed
While that is cooking add prosciutto to a small pan and sauté until browned
In a mason jar mix together dressing
Mix together veggies, orzo, goat cheese, and prosciutto
Cover with dressing mixture and mix together until orzo salad is coated with dressing
Divide into four meal prep containers and enjoy
I heat mine up for a 1 min and 30 seconds before I eat! So I eat it hot but you can also eat it cold.
