Enchilada Meal Prep

Ingredients
- 3 Large Chicken Breasts
- 1 Jar Salsa of Choice
- 1/2 Packet Taco Seasoning
- 8 Corn Tortillas of Choice
- 1 Cup Plain Greek Yogurt
- 1 Can Black Beans
Instructions
- In a crockpot add chicken (cut in half), half a jar of salsa, and ½ packet of taco seasoning
- Cook on high for 4 hours or low for 8Shred chicken and set aside (I usually shred the chicken the night before prep to make it easier to assemble)
- Preheat oven to 350
- Add one corn tortilla to the bottom of 4 glass oven safe meal prep containers
- Cover with salsa chicken mixture. In a separate bowl mix together greek yogurt and the other half of the salsa
- Layer on top of chicken mixture
- Add a layer of black beans and cheese (Measure with your heart here, I just eyeballed it)
- Repeat process with tortilla, chicken, greek yogurt, black beans, and cheese
- Once you have two tortillas and two layers pop it in the oven for 30 minutes
- Garnish with cilantro and white onion once cooked
