Creamy Chicken Pasta

Ingredients

  • 2 large chicken breasts
  • Seasoned with: paprika onion powder, garlic powder, chili powder, cumin
  • 1 12 oz box of pasta you can use chickpea pasta for added fiber and protein
  • 1/4 cup sun dried tomatoes
  • 1/4 cup whipped cream cheese can swap for DF cream cheese
  • 2 tbsp tomato paste
  • 1/4 cup pasta water
  • Handful of spinach or arugula
  • 1/2 shallot minced
  • 1/4 cup Parmesan cheese

Instructions

  • Cut chicken breast into bite sized pieces and season with the seasonings above (paprika, onion powder, garlic powder, chili powder, and cumin)
  • Cook chicken in a pan with some olive oil and the shallot until fully cooked
  • Boil water and cook pasta
  • While pasta is cooking in a separate pan add ingredients to make sauce.
  • SAUCE: Over medium heat add tomato paste, pasta water, whipped cream cheese, and sun dried tomatoes
  • Combine sauce, chicken and drained pasta
  • Mix in spinach and arugula and stir together
  • Separate pasta into four meal prep containers and top with parmesan cheese
  • Enjoy throughout the week!
