Chipotle Steak Bowls

Ingredients
- 2 lbs Skirt Steak
- 1 Yellow Onion
- 2-3 Bell Peppers
- Fajita Seasoning Store Bought
- 1/2 Cup Plain Greek Yogurt For Serving
Cilantro Lime Rice Mixture
- 1 Cup Jasmine Rice
- 1 Cup Riced Cauliflower
- 1/2 Cup Chopped Cilantro
- Juice from 1/2 Lime
- 1 tsp Salt
Corn Salsa
- 1 Can Corn Drained and Rinsed
- 1/2 Red Onion Diced
- 1 Jalapeno
- 1/4 Cup Cilantro Chopped
- 1 tsp Salt
- 1 tsp Garlic Powder
- Juice from 1/2 Lime
Instructions
- Season cut up steak with fajita seasoning and sauté in pan with olive oil until cooked
- Cut up pepper and onions and season with taco seasoning or fajita seasoning (the pre made ones make it easy) and sauté until cooked through
- Cook your rice and make your corn salsa and then assemble your bowls
- Assemble your bowl with Rice, Corn salsa, Steak, Peppers & Onions, Greek Yogurt
